Snowzillageddon

We often eat dinner around 5 o’clock, but some meals are meant to be enjoyed later in the evening. When I heard about the impending Snowzillageddon, I knew I needed a meal that could be enjoyed later in the evening: pork chops, asparagus, and Basmati rice medley. This dinner wasn’t difficult, but does take a bit to cook. The time is worth it though because it was delicious. This recipe is only a rough estimate, so taste as you go and add whatever you feel necessary.

Pork Chops with White Wine Lemon Herb Sauce

  1. Preheat oven to 350
  2. Chop three cloves of garlic
  3. Add garlic and 3 to 4 tablespoons of olive oil to a cast iron or other oven safe pan
  4. Sautee on medium for 1 minute and then add pork chops
  5. Cook on each side for 2 to 3 minutes
  6. Add 1/4 to 1/2 cup dry white wine, 2 tsp chopped rosemary, and 2 tablespoons lemon juice
  7. Simmer for 3 to 4 minutes, then move pan to oven roast for 15 – 20 minutes
  8. When chops are cooked to your liking, remove from oven and pan
  9. Bring liquid to boil
  10. While whisking, sprinkle 1.5 tablespoons of flour, simmer for 1 minute

While the pork chops were cooking, I roasted a bunch of asparagus with salt and pepper, olive oil, and chopped garlic. Jeremy made Trader Joe’s Basmati Rice Medley.

A Little Trip to the Cape

On Friday morning, I whisked Jeremy away to the Cape for the night. Some old friends are working on the Cape for the summer and I really wanted to see them before they returned to Ohio. They are working for the Monomoy Theater in Chatham, MA, and we went down to see The Cherry Orchard, a play by Anton Chekov.

We left early Friday, but not too early, in an attempt to avoid Massachusetts traffic. If I ever have to live in Boston, I will need to be able to take public transportation because I HATE driving there. The drive went smoothly, and we stopped in Plymouth to see the rock and eat lunch.

IMG_4559After hanging out and walking around, we continued down the Cape which is really up the Cape to Yarmouth, where we were staying. After looking around for a while, and some people – not me – napping, we got dressed and headed to Chatham for dinner and then the show. The Monomoy Theater is really just beautiful. It is a true Cape style building and has a flower garden off the side where refreshments are served by twinkle lights during intermission. If you live in the area, you should go down and see a show. While good literature is always timeless, The Cherry Orchard was timely. It was about a Russian family from the early 1900’s who is in the process of losing their home to foreclosure. A change of costume could have easily put this show in 21st century America.

Cape Cod 2010

It was so good to see our friends that we haven’t seen in five years. Time seems to move so quickly now. Let’s hope it’s not another five years before we see them again.

Saturday before we left, Jeremy and I ate brunch at the Keltic Kitchen in Yarmouth, which was near our hotel. While the food was ok, there was way too much of it. Neither of us could finish our food and it was just not all very basic. They didn’t even have Irish butter.

On our way home, we had to stop at Trader Joe’s and Sonic; we just do not have these things in NH. I stocked up on some foods that will come in handy during the harried first weeks of school, and since we had a cooler, I could get some frozen things too. I had a nice discussion with one of the managers about TJ’s coming to NH; things don’t look good friends for a TJ’s in the “Live Free or Die” state.

This was a nice quick trip. We are trying to soak up every ounce of summer while we can.

Stuffed Peppers and Stars

Last night I made stuffed peppers for the first time.  A few weeks ago, when Kalin made peppers I knew I wanted to try them.  I mixed Trader Joe’s Basmati Rice Medley with chicken broth and cooked it per the directions. Really, I could eat this on its own. While that was cooking, I roasted the peppers for 15 minutes in the oven and chopped garlic and onion. I sautéed garlic, onion, and lentils in a pan. After they were all flavorful, I added some crushed tomatoes and a few cups of the rice mixture.  I stuffed my peppers with just that mixture but for Jeremy’s I added some leftover ground beef. All of the peppers were topped with Cabot’s 50% reduced fat cheddar. They baked for about ten minutes and while they were baking, I added some Olivia’s Spring Mix and strawberries to the plate and whipped up a balsamic vinaigrette with a little jalapeño from our garden. The spicy went great with the sweet strawberries. I really enjoyed these and can’t wait to eat my other one.

After dinner, we came back inside and watched a House DVD, yes I am hooked and really enjoying Season 1.

At about 12:45 we headed outside to watch the star show. Even though I was afraid the skunks would come, we have so many in the neighborhood, it was awesome. Jeremy and I stayed outside until almost 4:00 watching the meteor shower. Of course there were snacks: hummus, carrots, pita chips and one Coke to split.

At first it didn’t seem the clouds would clear, but then the sky opened up and there was light everywhere. Sometimes I think teachers and students get the summer off to refuel their sense of wonderment. If I had another job, I would not have been able to stay up for the peak of the shower. You cannot sit under a sky like last night’s sky and not marvel at the infinite and the infinitesimal.

Will Run for Beer

I woke up this morning with some dread. The weather forecast was not good. 85% chance of thunderstorms, and we were supposed to run the last 5K in the Will Run for Beer series. On Jan 1st I had never run a 5K, now I’ve run three 5K’s and a Four Miler.

When I got up I was not hungry at all, I choked down half a serving of oatmeal and ate half of a banana. Jeremy and I went for a little warm up jog around the block, stretched and then hung out.  Since this race was in our town, we didn’t have to worry about driving or parking and no porta-potties! This was definitely a highlight.

Newmarket was all a buzz with people. Today was the day that everyone who ran five or more races got their jackets. It seemed that everyone was in a good mood. The weather miraculously held, and we made the whole race and after party without rain.

My goal for the race was to run the whole way, remember I am not a runner.  At the beginning of the race someone who is a runner, met up with me – Miriam from Adventures of a Filly Runner.  Miriam was fresh off the Pinelands 50K; that’s right Five Oh. She injured her quad which almost slowed her down enough to run with me. She and Jeremy pushed me right along and helped me PR 35:33 (I know I’m slow, but it’s a three minute improvement) . Thanks guys, you’re the best.

It was so cool to run all the way and to run in our own town, even past our house. I Y Newmarket.

After the race there was beer, pizza, and music.

All in all it was a great day. The big storm did end up hitting, and I am really glad we weren’t all out in it.

Dinner was simple. Leftover Asian Cabbage salad from yesterday and Trader Joe’s Pot Stickers. Surprisingly, I only liked theses pot stickers.

I like mine to have a lot of veggies. I guess I’ll have to go back to making my own. They did contribute to a very easy dinner though.

PowerPoint Cubed

Today has been such a long day. Sometimes it seems like long days start the day before. Yesterday I made a PowerPoint at school; for some reason it didn’t save. I came home last night and remade the PowerPoint.  When I got to school this morning, to set up for the day, the PowerPoint was no where to be found; I’m pretty sure my flash drive has died. I was so frustrated. I called Jeremy and had him check on my laptop. Still nothing. So for time three, I had to race and re-do the PowerPoint before my freshmen class. One of my juniors in my sophomore class was a total jerk to me today, telling me I pick on him, that I’m mean to him, and that I yell at him. All things which are obviously not true. Sometimes my students drive me crazy. I didn’t get to eat lunch today, because I had to attend a meeting for a student who blatantly said he would not do his work. I hate missing lunch because being a teacher is not like working at a desk. I can’t quietly sit and eat at my desk without an audience, so I had to eat my soup with a full class. And lastly, then I’ll quit complaining, I’ve applied to several jobs and I’ve heard nothing from anyone. Based on my resume, I’m really pretty marketable. Apparently, no one else agrees. It’s frustrating. In the words of Scarlett, “I can’t think about that right now. If I do, I’ll go crazy. I’ll think about that tomorrow.”

When I got home from work, I ate some of my Trader Joe’s Olive Oil popcorn, then I took a nap.

Jeremy ate the left over salad from last night, and I had some Brussels’ sprouts topped with bacon and a side of Annie’s Mac & Cheese. It was a salty, satisfying dinner.

I’m looking forward to Glee tonight for a little sunshine, singing, and smiles. After all tomorrow is another day.
