Sometimes I don’t know if a recipe is healthy or not. I have a little check list when I think about eating something as to whether or not it’s healthy.
- Is it made with real ingredients? (things you can say and purchase)
- Is it low-calorie? (I’d say low-calorie equals less than 300 calories a serving)
- Is it something I would feed a kid? (If it comes out of a box and is chock full of HFCS I wouldn’t give it to a kid)
- Is there some type of vegetable present? (I will add broccoli to basically any dish)
I think most of the food I make fits 3 out 4. I don’t really buy diet foods. I’d rather weigh an extra two pounds than eat foods that have the words low-fat, or low-calorie written on them, which is usually code for things like aspartame (This obviously does not apply to the occasional Diet Coke; I’m only human). All this to say I have a new obsession – Cheesy Risotto.
Why didn’t anyone ever tell me about the wonderful world of risotto? SHAME!
Risotto always sounded like a laborious process, but this cooks up so quickly. I followed the recipe on the back of the container and added a 1/2 cup of gruyere and a 1/2 cup of Asiago at the end. This meal is certainly comforting.
However, I’ve been trying to decide if it’s “healthy”?
Is it made with real ingredients? Yes – real cheese, stock, and rice
Is it low-calorie? Heck No
Is it something I would feed a kid? Definitely
Is there some type of vegetable present? Yes – broccoli, but I already have other variations in mind leeks, peas, asparagus
So I guess 3 out of 4 ain’t bad.
