Pretty, sunny days require a trade off during the winter in the Northeast. If it’s sunny, then there are no clouds. If there are no clouds, then it is going to be really cold. Regardless of the cold, we risked life and limb to go for a walk. ![]()
Someone needed a rest when we got back and used the newly acquired snow lounger.
On a cold day like today, cookies can help keep you fueled for doing things like finishing House season 4 or watching football. When I have so many “important” things to do, I don’t want to spend an hour baking cookies. Behold my favorite cookies. Start to finish, you are looking at about ten minutes.
I’ve tweaked this recipe over the years, and now I think it’s probably memorized. That’s it. No monitoring. No cooling racks.
| Peanut Butter Oatmeal No-Bakes |
- 1 1/2 cups sugar
- 3 T cocoa powder
- 1/2 cup butter
- 1/2 cup milk
- 1 pinch of salt
- 3 cups oats
- 1/2 cup PB
- 1 tsp. vanilla
- Bring sugar, cocoa, butter, milk, and salt to a boil. Boil for one minute.
- Remove from heat and stir in oats, PB, and vanilla
- Drop mixture by spoonfuls onto parchment paper or aluminum foil
- Cool for 10 to 15 minutes or until set
