One of the things I was most looking forward to today was bbq nachos. A few months ago, I ordered nachos and was brought barbequed beef nachos. At first I didn’t like them, but then they really grew on me. Since then though, we’ve been making our own variations of bbq nachos at home.
While I wouldn’t say this meal is “healthy” it’s really not horrible there are lots of veggies and lean meat.
Ingredients:
.5 pound of chicken
any barbeque sauce
multigrain chips
50% reduced fat jalapeno cheddar
onion
green pepper
jalapeno
lettuce
Procedure:
Preheat oven to 400
Cook chicken (we usually boil ours, which cuts out fat and makes it easy to shred)
Chop veggies
Shred cheese
Shred chicken and mix with 1/4 cup of bbq sauce and jalapenos
Place chips in a pie pan and top chips with chicken, green pepper, onion, and cheese
Bake for 10 minutes or until cheese and chips brown
Top with lettuce and a little extra bbq sauce
These are a great meal for a tired night. If you chop the veggies in advance, all the better. It was nice enough to eat outside so pumpkin beers with cinnamon sugar rims were enjoyed at the picnic table along with delicious nachos. This is not my favorite bbq sauce, but it was on sale and hfcs free. When we use the rest I’ll dilute it with some vinegar.
If you can get Saranac Pumpkin Ale where you live, DO IT! It is the best pumpkin beer I’ve had all year. Do not drink it out of the bottle. This beer must be enjoyed in a glass because the autumnal fragrance is just heavenly.
