I think I’m falling in love with Homespun Sunday’s. Before I started this, I thought I made most things from scratch, but then I thought a little about some of the quick fixes I do use. Now I see it as a challenge to make as many elements of the meal as I can.
Today’s lunch/dinner is one of my favorite easy recipes. We pretty much always have the ingredients on hand, it doesn’t take too long, and you don’t need a recipe – Frittata. I love frittatas because you don’t have the hassle or calories of a crust , and it can use a variety of ingredients every time.
Basic Fritatta
Ingredients:
- Eggs
Bacon (could be prosciutto, ham, Canadian bacon)
Onion, Green Pepper, Broccoli (Really, you could use any combination of veggies.)
Milk (I always use Jeremy’s skim milk but any kind except for sweet milks will do.)
Cheese
The general procedure: (Salute, General Procedure for you HIMYM fans)
- Preheat oven to 375
- Bacon maybe a quarter of a pound. Fry it up. Drain off all but a tablespoon.
- While the bacon cooks, chop onion, green pepper and broccoli. Toss the veggies in the hot pan with the remaining bacon drippings. This is not a lot of fat and the flavor is 100% worth it. Cook until veggies are softened.
- Spray a pie pan with cooking spray.
- Dump veggies into pie pan, crumble bacon on top.

- Whisk together 6ish eggs, 1/4 cup of milk, and ground pepper. Dump onto vegetables and bacon.
- I like to shred a hard cheese on top like Parmesan or Asiago, but you can use anything you have on hand.
- Bake for 20 – 25 minutes until there is no jiggle in the middle, no one likes jiggle in the middle.
We enjoyed ours with some fresh basil on top, homemade oatmeal wheat bread, and side salads. I drizzled a little EVOO and balsamic vinegar on my salad. This is one of those meals that keeps on giving leftovers.
